This course will help you to learn how to make a range of tasty dishes from around the Mediterranean, exploring the cuisines of Spain, Italy, Greece, Morocco, and Lebanon. Week by week, we will cover a range of different recipes to extend your skill base and repertoire. Here are examples of dishes planned, however changes can be made to suit your needs: Moroccan vegetable couscous, Turkish Borek, Greek Dolmades, Spanish omelette, seafood linguini, Wild mushroom risotto.

On this course you will learn how to prepare and cook a selection of quick, easy and healthy marinades and rubs for a delicious BBQ as well as side dishes to compliment the marinade.
You will learn how to prepare marinades, and use it accordingly to marinade your meat. Then either cook during the session or to Barbecue later, or freeze.
You will learn different styles and ingredients to use in recipes, and learn some excellent new recipes to complement the meats.

On this course, you will be introduced to the major components of a nutritious meal and learn the basic principles of meal planning. You will develop a range of essential kitchen skills to enable you prepare and cook nutritious meals to suit budgets. We will be tackling 3 dishes, “One pot pasta”, Cauli Kale sausage bake” and Fisherman’s pie.
